Any ideas on what Katori means in relation to Katori Shinto Ryu

Katori is the name of the region where is located the katori Jingu (sanctuary) associated to this school.

One of the followers of Iizasa Chosai Ienao washed his horse at the sanctuary's source, then the horse suddenly died. Ienao took this as the expression of the power of the kami of the place. It was for him a spiritual enlightement, so he associated his school to the sanctuary.
