Can the sori have any effect on nukitsuke or iai kata for that matter? Is there any sori thats better than other? Say a few millimeters more or less? Also, is a flat shinogi better than a raised shinogi for tameshigiri? Any scientific differences?

Not a iaidoka but my impression is that sori definitely affects nukitsuke. More sori makes life difficult IIRC.

Thinner blades (flatter shinogi) do better in test cutting.

A big sori makes It easier to draw but takes away the balance of the blade down fom the kensaki. Not so noticeable with a shorter blade but is with longer lengths.
