Does anyone know how to make these? I tried cooking some brown rice dough in the oven for 350 but it ended up turning cakey instead of rock hard.

Well, finally got around to the food forum, here's what I know.

Katayaki are not baked first of all, they are grilled. Once they start to rise from the heat of the grill, add some sesame seeds, nori or laver, to the top for more flavoring. Then they are weighted on top with a block of wood. This causes it to flatten and they come along and push on the block to flatten it further.

As far as I know, they are made with the same ingredients as most senbei, but brown rice flour is added too, not sure of the porportions used. I was also told they will brush with a soy based marinade sometimes.

Maybe do google search for more? I don't have any recipes for this at home.

So thats how they did it. It would be really nice to have a book that gives out the recipe to all 120 different kinds of senbei. After I try making some salty tamari katayaki I will then try some tasty senbei ideas. Thanks for the help.
